Many of us are taught to take our vitamins from a very young age. Perhaps we all know that vitamin C is a powerful antioxidant mostly present in fruits like oranges. But did we know that vitamin C deficiency can cause a condition known as scurvy where one experiences severe joint pain, swollen gums and bruising.
There’s probably a lot more you didn’t know about this important nutrient. Let’s start off with 5 facts about vitamin C.
Vitamin C is also present in meats.
Most people assume that Vitamin C is only present in citrus fruits and vegetables. You’ll be surprised to know that this important vitamin is also found in meats like liver and oysters, though in very small amounts. Potatoes also contain a significant amount of vitamin C.
Overcooking can destroy vitamin C.
Vitamin C is considered a delicate nutrient that can be easily destroyed when exposed to high temperatures. Therefore, cooking, boiling over 190 degrees Celsius can kill vitamin C.
You are never advised to boil fruits or vegetables that contain this nutrient because it discards the important ingredients. If you boil it, the water shouldn’t be discarded since most of the vitamins are present in it.
The body doesn’t absorb all vitamin C from food you eat.
Your body only absorbs about 70% of vitamin C that you consume. The rest of it eliminates through urine. This is done just 30 minutes after consuming foods rich in this ingredient.
Aids in weight loss
One of the most important facts about Vitamin C is its contribution to weight loss. According to a study that was carried out in Arizona State University, this important nutrient can help in weight control. By consuming meals that are naturally rich in vitamin C, you are able to reduce the body fat percentage and obtain a regular BMI.
Vitamin C deficiencies are not common.
Very few people suffer from Vitamin C deficiencies. First thing we need to understand is that the body cannot generate vitamin C. This nutrient is only present in the foods we consume. If you do not consume foods that are rich in Vitamin C then you may suffer from conditions like scurvy.
Most people are not at risk of a deficiency because the levels of vitamin C present in foods like citrus fruits is high. For instance, an orange has about 70mg of vitamin C which is the average amount required for adults per day.
As nurses, we should be the embodiment of a perfect health and body for our patients to look up into it. With these facts, hopefully we would be able to educate our patients the importance of balance diet for a healthier life.
